philosophy:6 egg yolks, 6 tbsp. sugar, 1 1/2 vanilla beans- split lengthwise, 1 1/2 c. whipping cream, 6 tbsp. (packed) brown sugar. preheat oven to 325 degrees. whisk yolks and sugar in bowl. scrape in seeds from vanilla beans, gradually whisk into cream. divide mixture among 6 ramekins. arrange dishes in 13x9x2 pan. pour hot water into pan to come halfway up sides of ramekins. bake custards until set in center, about 40 min. remove ramekins from water; chill overnight. preheat broiler. sprinkle 1 tbsp. brown sugar on each custard. place ramekins on baking sheet and broil until sugar starts to caramelize, about 2 min. chill until topping hardens. garnish with raspberries.
